ABOUT THIS CUT The tomahawk is a ribeye steak with the long, Frenched rib bone left intact—dramatic presentation, rich marbling, and classic ribeye flavour.
Cooking notes: Best for reverse-sear or grill + oven finish due to thickness. Aim for an internal 63 °C for whole cuts, then rest ≥3 minutes. Prefer medium-rare? Pull at ~57–58 °C and rest. Keep the bone side closer to heat early; finish with a hot sear for crust.
